Biscuit Preparation

    Make the Biscuit Dough

    Preheat the oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Stir in the cheddar and jalapenos. Add buttermilk and mix until just combined.

    Shape and Bake

    Turn the dough onto a floured surface and knead gently. Pat into a 1-inch thick round and cut out biscuits. Place on a baking sheet and bake for 15-20 minutes until golden.

Pulled Pork Preparation

    Cook the Pork

    Season the pork shoulder with salt and pepper. Cook in a slow cooker on low for 8 hours or until tender. Shred the meat and mix with barbecue sauce.

Sauce Choron Preparation

    Prepare the Sauce

    In a saucepan, melt butter over low heat. In a bowl, whisk together egg yolks, tomato paste, and lemon juice. Gradually add melted butter to the egg mixture, whisking constantly until smooth. Season with salt.

Assembly

    Place a biscuit on a plate, top with pulled pork, a poached egg, and drizzle with Sauce Choron. Garnish with cracklins, fresh herbs, and a few dashes of Crystal Hot Sauce.
