Beignet Preparation
Make the Dough
In a large mixing bowl, sift together the flour, baking powder, sugar, and salt. In a separate bowl, whisk together the milk, egg, and vanilla extract. Pour the wet ingredients into the dry ingredients and mix until a smooth dough forms.
Rest the Dough
Cover the dough with plastic wrap and let it rest for about 30 minutes at room temperature.
Heat the Oil
In a deep pot, heat vegetable oil to 350°F (175°C) for frying the beignets.
Fry the Beignets
Drop spoonfuls of the dough into the hot oil, frying in batches until golden brown, about 2-3 minutes per side. Remove and drain on paper towels.
Dust with Powdered Sugar
While the beignets are still warm, dust generously with powdered sugar.
Café Au Lait Anglaise Preparation
Make the Custard
In a bowl, whisk together egg yolks and cornstarch until smooth. Slowly pour the warm milk mixture into the egg yolk mixture, whisking constantly.
Thicken the Sauce
Return the mixture to the saucepan over low heat, stirring constantly until it thickens. Do not boil.
Serve
Serve the warm beignets alongside the café au lait anglaise for dipping.
