Grilling the Pork Chops

    Prepare the Pork Chops

    Rub the pork chops with olive oil, garlic powder, salt, and black pepper. Let marinate for at least 30 minutes.

    Grill the Pork Chops

    Preheat the grill to medium-high heat. Grill the pork chops for about 6-8 minutes on each side, or until they reach an internal temperature of 145°F (63°C). Remove from the grill and let rest for 5 minutes.

Making the Parsnip Purée

    Cook the Parsnips

    In a pot, add the chopped parsnips and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

    Blend the Purée

    In a blender, combine the cooked parsnips, butter, heavy cream, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.

Preparing the Tchoupitoulas Sauce

    Sauté the Vegetables

    In a skillet, heat olive oil over medium heat. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are soft, about 5-7 minutes.

    Add Tomatoes and Seasonings

    Add the diced tomatoes, Cajun seasoning, chicken broth, salt, and black pepper. Simmer for about 15-20 minutes until thickened and flavors meld.

Plating the Dish

    Serve

    On a plate, place a generous scoop of parsnip purée, top with a grilled pork chop, and spoon over the Tchoupitoulas sauce. Enjoy!
