Making the Parsnip Purée

Cook the Parsnips
In a pot, add the chopped parsnips and cover with water. Bring to a boil and cook until tender, about 15-20 minutes. Drain well.

Blend the Purée
In a blender, combine the cooked parsnips, butter, heavy cream, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning if necessary.
Preparing the Tchoupitoulas Sauce

Add Tomatoes and Seasonings
Add the diced tomatoes, Cajun seasoning, chicken broth, salt, and black pepper. Simmer for about 15-20 minutes until thickened and flavors meld.
Plating the Dish

Serve
On a plate, place a generous scoop of parsnip purée, top with a grilled pork chop, and spoon over the Tchoupitoulas sauce. Enjoy!
