Cooking Instructions

  1. 1

    Prepare the Grits

In a large pot, bring the water to a boil. Slowly whisk in the stone-ground grits. Reduce heat to low and simmer, stirring occasionally, for about 20-25 minutes or until grits are thick and creamy.

  2. 2

    Add Goat Cheese

Once the grits are cooked, stir in the goat cheese until fully melted and combined. Season with salt and black pepper to taste.

  3. 3

    Sauté the Peppers and Shrimp

In a large skillet, heat the olive oil over medium heat. Add the diced sweet bell peppers and minced garlic. Sauté until the peppers are tender, about 5 minutes.

  4. 4

    Cook the Shrimp

Add the shrimp to the skillet along with paprika and cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat.

  5. 5

    Make Sun-Dried Tomato Butter

In a small bowl, mix sun-dried tomatoes with softened butter until well combined.

  6. 6

    Assemble the Dish

Spoon the goat cheese grits onto plates. Top with the sautéed shrimp and peppers. Add a dollop of the sun-dried tomato butter on top. Garnish with chopped green onions.
