Add Goat Cheese
Once the grits are cooked, stir in the goat cheese until fully melted and combined. Season with salt and black pepper to taste.

Sauté the Peppers and Shrimp
In a large skillet, heat the olive oil over medium heat. Add the diced sweet bell peppers and minced garlic. Sauté until the peppers are tender, about 5 minutes.

Cook the Shrimp
Add the shrimp to the skillet along with paprika and cook until the shrimp are pink and opaque, about 3-4 minutes. Remove from heat.

Make Sun-Dried Tomato Butter
In a small bowl, mix sun-dried tomatoes with softened butter until well combined.

Assemble the Dish
Spoon the goat cheese grits onto plates. Top with the sautéed shrimp and peppers. Add a dollop of the sun-dried tomato butter on top. Garnish with chopped green onions.
