Cooking Instructions
- 1
Prepare the Maque Choux
In a large skillet over medium heat, melt 2 tablespoons of butter. Add the diced onion, red bell pepper, and green bell pepper, and sauté for about 5 minutes until softened.
- 2
Add Corn and Broth
Stir in the corn, vegetable broth, Cajun seasoning, salt, and black pepper. Cook for an additional 10-15 minutes until the mixture is thickened and flavors meld.
- 3
Cook the Okra
In a separate skillet, heat 1 tablespoon of butter over medium heat. Add okra and sauté for 5-7 minutes until tender and lightly browned. Season with salt and pepper, then set aside.
- 4
Make Garlic-Herb Butter
In the same skillet used for the okra, add the remaining tablespoon of butter, minced garlic, parsley, and thyme. Cook for 1-2 minutes until fragrant.
- 5
Pan-Sear the Salmon
Season the salmon fillets with salt and pepper. In the skillet, sear the salmon over medium-high heat for 4-5 minutes on each side, or until cooked through and golden brown.
- 6
Plate the Dish
On each plate, place a generous portion of Maque Choux, top it with a salmon fillet, drizzle with garlic-herb butter, and garnish with sautéed okra.
