    Prepare Ingredients

    Chop the onion, green bell pepper, celery, and garlic. Dice the chicken and slice the Andouille sausage.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

    Cook the Sausage and Chicken

    Add the Andouille sausage and chicken to the pot. Cook until the chicken is browned on all sides.

    Add Remaining Ingredients

    Stir in the diced tomatoes, chicken broth, Cajun seasoning, bay leaves, salt, and pepper. Bring to a boil.

    Simmer the Gumbo

    Reduce heat to low and let it simmer for about 30 minutes, stirring occasionally.

    Finish with Filé

    Remove from heat and stir in the Filé powder. Adjust seasoning with salt and pepper if necessary.
