Marinate the Chicken
In a bowl, combine the buttermilk and Creole seasoning. Add the chicken thighs, ensuring they are well coated. Cover and refrigerate for at least 2 hours or overnight.

Prepare the Breading
In a separate bowl, mix the flour, salt, black pepper, and remaining Creole seasoning.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Remove the chicken from the buttermilk mixture, allowing excess liquid to drain. Dredge each piece in the flour mixture, pressing to adhere. Fry the chicken in the hot oil until golden brown and cooked through, about 6-8 minutes per side. Drain on paper towels.

Assemble the Sandwich
On each hamburger bun, place a piece of fried chicken, top with sliced beefsteak tomato, drizzle with Crystal hot sauce, and add Mardi Gras slaw if desired.
