For the Pancakes

    Prepare the Pancake Batter

    In a mixing bowl, whisk together flour, baking powder, salt, and black pepper. In another bowl, combine buttermilk, eggs, and chopped scallions. Gradually mix the wet ingredients into the dry ingredients until just combined.

    Cook the Pancakes

    Heat a skillet over medium heat and melt 1 tablespoon of butter. Pour 1/4 cup of batter into the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for another 2-3 minutes until golden brown. Repeat with remaining batter, adding more butter as needed.

For the Creole Tomato Sauce

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add diced onion, green bell pepper, and celery, and sauté for about 5 minutes until softened. Add minced garlic and sauté for an additional minute.

    Add Tomatoes and Seasonings

    Stir in the canned diced tomatoes, Worcestershire sauce, cajun seasoning, salt, and black pepper. Simmer for 15-20 minutes, allowing flavors to meld.

For the Shrimp

    Prepare the Shrimp

    In a bowl, toss shrimp with lemon juice and cajun seasoning. Add the shrimp to the simmering sauce and cook for 5-7 minutes, until shrimp are pink and cooked through.

To Serve

    Serve the pancakes topped with the shrimp creole mixture and extra sauce. Enjoy!
