Method

Chocolate Delice Preparation

Melt Chocolate and Butter

In a heatproof bowl, melt the dark chocolate and unsalted butter together over a pot of simmering water until smooth. Remove from heat and let cool slightly.

Mix Eggs and Sugar

In a separate bowl, whisk together the eggs and granulated sugar until light and fluffy.

Combine Mixtures

Fold the melted chocolate mixture into the egg mixture until fully combined. Add a pinch of salt.

Bake

Pour the mixture into a lined baking dish and bake at 170°C (340°F) for about 20-25 minutes. Let cool before serving.

Salted Honey Cream Preparation

Whip Cream

In a mixing bowl, whip the heavy cream until soft peaks form.

Add Honey and Salt

Gently fold in the honey, sea salt, and vanilla extract until just combined.

Hazelnut Croquant Preparation

Prepare Hazelnuts

Toast the hazelnuts in a dry pan until golden brown. Set aside.

Make Caramel

In a saucepan, combine granulated sugar and water. Cook over medium heat until the sugar has dissolved and turns golden.

Combine

Add the toasted hazelnuts to the caramel and stir to coat. Pour onto a baking sheet to cool, then break into pieces.

Cook Sugar and Honey

In a saucepan, combine granulated sugar and honey. Cook over medium heat until it reaches 150°C (302°F).

Add Baking Soda

Remove from heat and quickly stir in baking soda until it bubbles up. Pour into a lined baking tray and let cool.
