Fried Gulf Fish

Prepare the Fish

In a bowl, whisk together flour, cornmeal, salt, and pepper. In another bowl, whisk eggs and milk.

Coat the Fish

Dip each fish fillet into the egg mixture, then dredge in the flour-cornmeal mixture, coating well.

Fry the Fish

Heat oil in a large skillet over medium-high heat. Fry fish for 3-4 minutes on each side until golden brown. Drain on paper towels.

Creamed Spinach

Cook the Spinach

In a large pot, melt butter over medium heat. Add minced garlic and sauté until fragrant. Add spinach and cook until wilted.

Make the Cream Sauce

Stir in heavy cream, salt, pepper, and nutmeg. Cook for a few minutes until thickened, then remove from heat.

Blood Orange Hollandaise

Whisk Egg Yolks

In a bowl, whisk together egg yolks and blood orange juice until pale and thick.

Add Butter

Slowly drizzle in melted butter while continuously whisking until the sauce is thick and creamy. Season with salt and cayenne.

Assembly

Plate the Dish

On each plate, place a portion of creamed spinach, top with a fried fish fillet, and drizzle with blood orange hollandaise.
