Preparing the Creole Tomato Gravy

Sauté the Vegetables

In a medium saucepan, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional 1 minute.

Add Tomatoes and Seasoning

Stir in the crushed tomatoes, cajun seasoning, salt, and black pepper. Bring to a simmer and let cook for about 15 minutes, stirring occasionally. Stir in the fresh basil just before serving.

Making the Cornbread Crumble

Mix Dry Ingredients

In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt.

Combine Wet Ingredients

In another bowl, whisk together the milk, beaten egg, and melted butter.

Combine and Bake

Pour the wet ingredients into the dry ingredients and mix until just combined. Pour into a greased baking dish and bake at 400°F (200°C) for 20-25 minutes or until golden brown.

Preparing the Oysters

Prepare the Oysters

In a bowl, toss the shucked oysters with lemon juice and chopped parsley. Let marinate for a few minutes.

Serve

To serve, spoon the Creole tomato gravy onto a plate, top with marinated oysters, and finish with a sprinkle of cornbread crumble. Enjoy!
