Preparation
1. Prepare the Sweet Potatoes
Peel and slice the sweet potatoes into thin rounds. Toss with salt and pepper to taste.
2. Cook the Sweet Potatoes
In a skillet, heat 1 tablespoon of butter over medium heat. Add the sweet potato slices and cook until crispy and golden brown, about 5-7 minutes per side. Remove from skillet and set aside.
Assemble and Grill
3. Assemble the Sandwich
Butter one side of each slice of bread. On the unbuttered side of one slice, layer 2 slices of white cheddar cheese and top with crispy sweet potatoes. Place the second slice of bread on top, buttered side facing out.
4. Grill the Sandwich
In the same skillet used for the sweet potatoes, add the sandwich. Cook over medium heat for 3-4 minutes until golden brown. Flip and cook the other side for another 3-4 minutes until the cheese is melted and the bread is golden.
