Marinate the Shrimp
In a bowl, combine the peeled and deveined shrimp with lemon juice and Cajun seasoning. Toss to coat evenly. Let marinate for at least 20 minutes.

In one shallow bowl, place the all-purpose flour mixed with salt and black pepper. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal.

In a deep pan or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Shrimp
Carefully add the breaded shrimp to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and cooked through. Use a slotted spoon to remove the shrimp and place them on paper towels to drain excess oil.

Slice the French rolls in half. Place a lettuce leaf on the bottom half of each roll, add several fried shrimp, a slice of tomato, and a generous drizzle of remoulade sauce. Top with the other half of the roll and serve immediately.
