Prepare the Salad

Prepare the Vegetables
Thinly slice the green cabbage, red cabbage, kohlrabi, brussels sprouts, and kale. Place all the sliced vegetables in a large mixing bowl.

Add Mixed Greens
Add the mixed greens to the bowl with the sliced vegetables and toss gently to combine.
Fried Wonton Strips

Prepare Wonton Strips
Cut each wonton wrapper into thin strips (about 1/4 inch wide).

Fry Wonton Strips
In a small pan, heat the vegetable oil over medium heat. Once hot, add the wonton strips in batches, frying until they are golden and crispy. Remove and drain on paper towels.
Make the Dressing

Combine Dressing Ingredients
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, grated ginger, and minced garlic until well combined.
Assemble the Salad

Dress the Salad
Pour the dressing over the salad mixture and toss until all the ingredients are evenly coated.

Top with Wonton Strips
Garnish the salad with the fried wonton strips on top.
