Soak the Beans
Rinse the red beans under cold water. Soak them in a bowl of water for at least 6 hours or overnight. Drain and set aside.

Prepare the Rice
In a small pot, add 1 cup of white rice and 2 cups of vegetable broth. Bring to a boil, then reduce to low heat, cover, and simmer for 18-20 minutes until the rice is cooked and the liquid is absorbed.

Add Garlic and Spices
Stir in the minced garlic, smoked paprika, cayenne pepper, dried thyme, salt, and black pepper. Cook for another 2 minutes until fragrant.

Cook the Beans
Add the soaked and drained red beans to the pot along with the remaining 1 cup of vegetable broth and the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 30-40 minutes, stirring occasionally, until the beans are tender.
Serving

Serve the Dish
Remove the bay leaf from the pot. Serve the red beans over the cooked rice. Garnish with chopped green onions and hot sauce if desired.
