Method
Preparing the Oysters

Select and Clean the Oysters
Choose 12 fresh domestic oysters from a reputable source. Rinse them under cold water to remove any grit or debris.

Shuck the Oysters
Using an oyster knife, carefully shuck each oyster. Hold the oyster in a towel with the curved side down, insert the knife into the hinge, and twist to open. Discard the top shell and keep the oyster in the bottom shell.
Making the Cocktail Sauce

Combine Ingredients
In a small bowl, mix together the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Adjust the hot sauce to your preference for spice.

Taste and Adjust
Taste the cocktail sauce and adjust the seasoning if necessary by adding more horseradish or hot sauce according to your preference.
Serving

Prepare the Platter
Arrange the shucked oysters on a serving platter, keeping them on the half shell. Make sure they are stable and won’t tip over.

Serve the cocktail sauce, horseradish, and saltine crackers on the side for dressing the oysters as desired.
