Combine Ingredients
In a large mixing bowl, combine the chopped lobster meat, mayonnaise, Dijon mustard, finely chopped celery, chopped green onions, lemon juice, Old Bay seasoning, salt, and black pepper. Stir until all ingredients are well mixed.

Chill the Filling
Cover the bowl with plastic wrap and refrigerate the lobster filling for at least 30 minutes to allow the flavors to meld.

Slice the Baguette
Take the French baguette and slice it in half lengthwise. This will create a top and bottom for the lobster sandwich.

Preheat your oven to 350°F (175°C). Place the buttered baguette halves on a baking sheet and toast in the oven for about 5-7 minutes, or until the edges are golden brown.
