Oysters

Method

Prepare the Oysters

  1. 1

    Shuck the Oysters

Carefully shuck the fresh oysters, removing them from their shells and placing them in a bowl. Remove any shell fragments.

Make the Battering Mixture

  1. 2

    Mix Dry Ingredients

In a large bowl, combine the all-purpose flour, cornmeal, salt, black pepper, and cayenne pepper. Mix well.

  2. 3

    Prepare Wet Mixture

In another bowl, whisk together the eggs and milk until well blended.

Fry the Oysters

  1. 4

    Heat the Oil

In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Batter and Fry

Dip each shucked oyster into the wet mixture, then dredge it in the dry mixture until fully coated. Carefully place the battered oysters in the hot oil, cooking in batches to avoid overcrowding.

  3. 6

    Cook Until Golden

Fry the oysters for about 2-3 minutes or until they are golden brown and crispy. Use a slotted spoon to remove them and drain on paper towels.

Prepare the Cocktail Sauce

  1. 7

    Mix Ingredients

In a small bowl, combine the ketchup, horseradish, lemon juice, Worcestershire sauce, and hot sauce. Stir until well mixed and adjust seasoning to taste.

Serve

  1. 8

    Plate the Oysters

Serve the hot fried oysters on a platter with the cocktail sauce on the side for dipping.
