Preparing the Catfish

Marinate the Catfish
Place catfish fillets in a bowl and cover with buttermilk. Allow to marinate in the refrigerator for at least 30 minutes.

Prepare the Breading
In a large bowl, mix together flour, cornmeal, paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.

Coat the Catfish
Remove the catfish from the buttermilk, allowing excess to drip off. Dredge each fillet in the flour mixture until evenly coated.
Frying the Catfish

Heat the Oil
In a deep skillet or frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Catfish
Carefully place the breaded catfish fillets in the hot oil, frying in batches if necessary. Cook for about 5-7 minutes on each side, or until golden brown and cooked through.

Drain and Keep Warm
Remove the fried catfish from the oil and place on a paper towel-lined plate to drain. Keep warm in a low oven while you prepare the fries.

Cut the Potatoes
Peel and cut the russet potatoes into thin strips (fries).

Heat the Oil for Frying
In another deep skillet or fryer, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Potatoes
Carefully add the cut potatoes to the hot oil, frying in batches if necessary. Cook for about 4-6 minutes, or until golden brown and crispy.

Remove the fries from the oil and drain on paper towels. Immediately sprinkle with salt to taste.
