Preparation of Calamari

    Prepare the Calamari

    Begin by cleaning the calamari if it hasn’t been done already. Cut the calamari tubes into rings approximately 1/2 inch thick. Pat them dry with paper towels to remove excess moisture.

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour, cornstarch, salt, black pepper, paprika, and garlic powder. Mix well until all ingredients are evenly distributed.

    Prepare the Egg Wash

    In another bowl, beat the eggs until smooth. This will be used to help the flour mixture adhere to the calamari.

Frying the Calamari

    Heat the Oil

    In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of the flour mixture into it; if it sizzles, the oil is ready.

    Coat the Calamari

    Dip each calamari ring into the egg wash, allowing any excess to drip off. Then, coat the ring in the flour mixture, ensuring it is evenly covered.

    Fry the Calamari

    Carefully place the coated calamari rings into the hot oil in batches. Fry for 2-3 minutes or until they turn golden brown and crispy. Avoid overcrowding the pan to ensure even cooking.

    Drain and Serve

    Once cooked, remove the calamari with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot with cocktail sauce and voodoo sauce on the side.
