    Prepare the Chicken

    Cut the chicken thighs into bite-sized pieces and season them with salt and black pepper.

    Prepare the Vegetables

    Chop the onion, bell pepper, celery, and mince the garlic. Slice the okra and set aside.

Cooking

    Sauté the Sausage

    In a large pot, cook the sliced smoked sausage over medium heat until browned. Remove and set aside.

    Cook the Chicken

    In the same pot, add the seasoned chicken pieces and cook until browned on all sides.

    Add Vegetables

    Add chopped onion, bell pepper, celery, and minced garlic to the pot. Sauté for about 5 minutes until softened.

    Combine Ingredients

    Stir in the sliced okra, canned diced tomatoes, chicken broth, bay leaves, and Cajun seasoning. Bring to a boil.

    Simmer the Gumbo

    Reduce the heat to low and let the gumbo simmer for 30 minutes, stirring occasionally.

    Add Shrimp

    Stir in the shrimp and cook for an additional 5 minutes until the shrimp are pink and cooked through.

    Adjust Seasoning

    Taste the gumbo and adjust the seasoning with salt and black pepper as desired.

    Ladle the gumbo into bowls and top each serving with a scoop of cooked rice. Garnish with fresh chopped parsley.
