Making the Roux

Prepare the Roux
In a large heavy-bottomed pot, heat the vegetable oil over medium heat. Gradually whisk in the flour, stirring constantly to avoid burning. Continue to cook, stirring frequently, until the mixture turns a deep brown color, about 20-30 minutes.

Add Crawfish and Broth
Stir in the crawfish tails and continue to cook for another 2-3 minutes. Then, gradually pour in the chicken broth, stirring to combine.

Season the Mixture
Add the Cajun seasoning, salt, black pepper, and bay leaves to the pot. Stir well to distribute the spices evenly.

Simmer
Bring the mixture to a gentle simmer, then reduce the heat to low. Let it cook uncovered for about 15-20 minutes, stirring occasionally.
Serving the Dish

Serve the Étouffée
Remove bay leaves before serving. Serve the crawfish étouffée over a bed of cooked white rice. Garnish with sliced green onions and chopped fresh parsley as desired.
