Method

Preparing the Catfish

    Marinate the Catfish

    In a shallow dish, pour the buttermilk over the catfish fillets. Allow the catfish to marinate for at least 30 minutes in the refrigerator.

    Prepare the Breading

    In a large bowl, combine the cornmeal, all-purpose flour, Cajun seasoning, salt, and black pepper. Mix well to combine.

    Bread the Catfish

    Remove the marinated catfish from the refrigerator. Dredge each fillet in the cornmeal mixture, ensuring an even coating on both sides.

Frying the Catfish

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Catfish

    Carefully place the breaded catfish fillets in the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Making the Remoulade Sauce

    In a medium bowl, mix together the mayonnaise, Dijon mustard, chopped capers, pickle relish, hot sauce, lemon juice, and chopped parsley until well combined.

Assembling the Breaux Boy

    Prepare the Buns

    Toast the hamburger buns lightly if desired. Place a lettuce leaf on the bottom half of each bun.

    Place a piece of fried catfish on top of the lettuce on each bun.
