Preparation of Cajun Spice Blend

Make the Spice Mix
In a small bowl, combine paprika, cayenne pepper, garlic powder, onion powder, dried thyme, oregano, black pepper, and salt. Mix well and set aside.
Cooking the Voodoo Sauce

Prepare the Voodoo Sauce
In a separate bowl, mix mayonnaise, hot sauce, lemon juice, garlic powder, and salt. Stir until well combined and adjust seasoning to taste. Set aside.
Cooking the Fried Rice

Sauté the Shrimp
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the shrimp and sprinkle with half of the Cajun spice blend. Cook for 2-3 minutes until the shrimp are pink and opaque. Remove from skillet and set aside.

Cook the Vegetables
In the same skillet, add another tablespoon of olive oil and sauté the diced bell pepper and minced garlic until fragrant, about 2 minutes.

Garnish and Serve
Remove from heat, stir in chopped green onions, and serve hot with the Voodoo sauce on the side.
