In a medium saucepan over low heat, combine cheddar cheese and cream cheese. Stir occasionally until melted and smooth.

Slowly add milk to the cheese mixture, stirring until the desired consistency is reached. Add in jalapeños, Cajun seasoning, garlic powder, and onion powder. Mix well.

Continue to cook the mixture on low heat until it is heated through, but do not allow it to boil.
For Assembling Nachos

Prepare the Base
Spread tortilla chips evenly on a large baking sheet or platter.

Generously drizzle the prepared Cajun queso over the tortilla chips, ensuring even coverage.

Add Proteins
Sprinkle your choice of popcorn shrimp, crawfish tails, popcorn chicken, sausage, or steak over the nachos.
