For the Boudin Balls

    Prepare the Mixture

    In a large mixing bowl, combine the cooked pork sausage, cooked rice, green onions, celery, and bell pepper. Mix thoroughly until all ingredients are well incorporated.

    Add Eggs and Seasoning

    Add the beaten eggs, Cajun seasoning, salt, and black pepper to the mixture. Stir until everything is evenly mixed.

    Form the Balls

    Using your hands, shape the mixture into small balls, about the size of a golf ball. Roll each ball in bread crumbs to coat evenly.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium-high heat until it's hot enough for frying (about 350°F or 175°C).

    Fry the Boudin Balls

    Carefully add the boudin balls to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 4-5 minutes or until golden brown and crispy.

    Drain and Cool

    Once fried, use a slotted spoon to remove the boudin balls from the oil and place them on a paper towel-lined plate to drain excess oil.

    In a small bowl, combine the yellow mustard, hot sauce, and honey. Stir until well mixed.
