Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare the Ingredients

    Wash and peel the potatoes. Dice them into small cubes. Chop the green bell pepper and onion into small pieces. Set aside.

Cooking the Sausage

    Cook the Sausage

    In a large skillet, over medium heat, crumble and cook the sausage until browned and fully cooked, about 8-10 minutes. Drain excess fat if necessary.

Combining Ingredients

    Sauté Vegetables

    In the same skillet with the sausage, add the diced potatoes, chopped green bell pepper, and onion. Cook for another 10-12 minutes, stirring occasionally, until the vegetables are tender.

    Add Eggs

    In a bowl, whisk the eggs and season with salt and pepper to taste. Pour the egg mixture over the sausage and vegetable mixture in the skillet. Stir gently to combine.

Baking

    Transfer to Oven

    Sprinkle the jack cheddar cheese evenly over the top of the mixture. Transfer the skillet (or pour into a greased baking dish) to the preheated oven.

    Bake for 25-30 minutes or until the eggs are set and the cheese is melted and bubbly.

Serving

    Cool and Serve

    Remove from the oven and let cool for 5-10 minutes before slicing and serving. Enjoy your Western Casserole!
