Prepare the Salad

    Mix the Salad Ingredients

    In a large mixing bowl, combine the drained tuna or cooked chicken, mayonnaise, celery, red onion, Dijon mustard, salt, black pepper, and lemon juice. Stir until well combined.

Assemble the Melt

    Prepare the Bread

    Butter one side of each slice of sourdough or rye bread.

    Spread the Salad

    On the unbuttered side of two slices of bread, generously spread the tuna or chicken salad mixture.

    Add Cheese

    Place a slice of American cheese on top of the salad. Top with the remaining slices of bread, buttered side facing out.

Grill the Sandwich

    Heat the Pan

    Preheat a skillet or griddle over medium heat.

    Grill the Sandwiches

    Carefully place the assembled sandwiches in the heated skillet. Grill for 3-4 minutes on one side until golden brown, then flip and grill the other side for another 3-4 minutes, until the cheese is melted and the bread is crispy.

Serve

    Slice and Serve

    Remove the grilled sandwiches from the skillet, slice in half, and serve hot.
