Preheat your oven to 425°F (220°C).

Mix Dry Ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, and salt.

Cut in Butter
Add the butter to the flour mixture and use a pastry cutter or your fingers to cut it in until the mixture resembles coarse crumbs.

Add Buttermilk
Stir in the buttermilk until just combined. Do not overmix.

Shape Biscuits
Turn the dough onto a floured surface and pat it down to about 1 inch thick. Use a biscuit cutter to cut out biscuits.

Place the biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
Gravy

Cook Sausage
In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled.

Sprinkle the flour over the cooked sausage, stirring to combine. Cook for 1-2 minutes.

Gradually add the milk, stirring constantly until the mixture thickens and is bubbling.

Add black pepper and salt to taste, stirring to combine. Remove from heat.

Prepare Potatoes
Wash and dice the potatoes into small cubes. Do not peel.

In a large skillet, heat the olive oil over medium heat. Add the diced potatoes and cook for about 10 minutes until they start to soften.
