Preparation
- 1
Cook the Bacon
In a large skillet over medium heat, cook the bacon slices until crispy, about 5-7 minutes. Remove from the skillet and place on paper towels to drain excess fat. Once cooled, chop into bite-sized pieces.
- 2
Sauté the Spinach
In the same skillet with some of the bacon drippings, add the fresh spinach. Sauté for 2-3 minutes until wilted. Remove from heat and set aside.
- 3
Prepare the Egg Mixture
In a large mixing bowl, crack the eggs and whisk until well combined. Season with salt and pepper to taste.
Cooking

Combine Ingredients
To the bowl with the whisked eggs, add the sautéed spinach, chopped bacon, feta cheese, jack cheese, and cheddar cheese. Stir until everything is evenly mixed.
- 5
Cook the Egg Mixture
Preheat the oven to 375°F (190°C). Pour the egg mixture into a greased 9x13 inch baking dish, spreading it out evenly. Bake for 25-30 minutes or until the eggs are set and the top is lightly golden.

Cool and Serve
Remove from the oven and let cool for a few minutes. Slice into squares and serve warm.
