Prepare Salad

    Mix Salad Ingredients

    In a medium bowl, combine the canned tuna or shredded chicken, mayonnaise, chopped celery, chopped green onion, lemon juice, salt, and black pepper. Mix well until all ingredients are evenly coated.

Make French Toast

    Prepare Egg Mixture

    In a shallow bowl, whisk together the eggs, milk, and vanilla extract until well combined.

    Cook French Toast

    Heat a large skillet over medium heat and add 1 tablespoon of butter. Dip each slice of bread into the egg mixture, ensuring both sides are coated. Place the coated bread in the skillet and cook until golden brown, about 3-4 minutes per side. Repeat with remaining bread, adding more butter as needed.

Assemble Melt

    Layer Ingredients

    On each slice of French toast, layer a slice of ham, a generous scoop of the tuna or chicken salad, and a slice of Swiss cheese. Top with another slice of French toast to create a sandwich.

    Return the assembled sandwiches to the skillet over low heat. Cover with a lid to help melt the cheese, cooking for another 2-3 minutes until the cheese is melted and the sandwich is heated through.
