Pancake Preparation

Mix Dry Ingredients
In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Combine Mixtures
Pour the wet ingredients into the dry ingredients. Add the melted butter and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Chocolate Chips
Fold in the chocolate chips gently into the batter.

Preheat Griddle
Heat a non-stick griddle or frying pan over medium heat. If necessary, lightly grease with butter or oil.

Cook Pancakes
Pour a small amount of batter onto the griddle to form the head of Mickey Mouse. For the ears, pour two smaller amounts of batter on either side. Cook until bubbles appear on the surface and the edges look set, about 2-3 minutes.

Flip Pancakes
Carefully flip the pancakes and cook for an additional 1-2 minutes until golden brown.

Remove the pancakes from the griddle and serve warm, adding more chocolate chips on top if desired.

In a frying pan over medium heat, cook the bacon strips or sausage links until crispy and cooked through, about 5-7 minutes. Drain on paper towels.
