Scrambled Eggs

Prepare the Eggs
In a mixing bowl, crack 4 large eggs and add 2 tablespoons of milk. Season with 1 teaspoon of salt and 1 teaspoon of black pepper.

Cook the Eggs
In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour in the egg mixture and let it sit for a few seconds.

Scramble the Eggs
Using a spatula, gently stir the eggs, allowing them to cook evenly. Continue to cook until they are softly set but still slightly runny. Remove from heat.

Prepare the Potatoes
Peel and dice 2 large potatoes into small cubes. Rinse under cold water and drain.

Prepare the Onion
Chop 1 medium onion finely.

Cook the Home Fries
In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced potatoes and chopped onion.

Season and Fry
Sprinkle with 1 teaspoon of paprika, 1 teaspoon of salt, and 1 teaspoon of black pepper. Stir to combine and cook, stirring occasionally, for about 15-20 minutes or until the potatoes are golden brown and tender.

In a separate skillet, cook 4 slices of bacon or 2 sausage links over medium heat. Cook until the bacon is crispy or the sausage is cooked through, about 5-7 minutes.
