    Cook the Sausage

    In a large skillet over medium heat, crumble and cook the Italian sausage until browned and cooked through, about 5-7 minutes. Drain excess fat and set aside.

    Cook the Potatoes

    In the same skillet, add the diced potatoes. Cook until tender and golden brown, about 10-15 minutes, stirring occasionally. Season with salt and pepper to taste.

    Scramble the Eggs

    In a bowl, whisk the eggs. Push the potatoes to one side of the skillet, add a little oil if needed, and pour in the eggs. Cook, stirring gently until scrambled and fully cooked.

Making the Gravy

    In a saucepan, melt the butter over medium heat. Whisk in the flour and cook for about 1-2 minutes until golden.

    Slowly whisk in the milk, ensuring there are no lumps. Cook until the gravy thickens, about 5-7 minutes.

    Add salt, black pepper, and garlic powder to the gravy. Stir to combine and remove from heat.
