Crust Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C).

Mix Crust Ingredients
In a mixing bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined and the mixture resembles wet sand.

Form the Crust
Press the crumb mixture firmly into the bottom of a 9-inch springform pan to form an even crust. Use the bottom of a measuring cup to compact it.

Bake the Crust
Bake the crust in the preheated oven for about 10 minutes until set. Remove from the oven and let it cool while preparing the filling.

Beat Cream Cheese
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2-3 minutes.

Add Sugar and Sour Cream
Gradually add granulated sugar and sour cream, mixing until well combined and smooth.

Incorporate Vanilla and Eggs
Add vanilla extract and mix until combined. Add eggs one at a time, mixing on low speed after each addition just until blended.

Gently fold in the all-purpose flour until just combined.

Pour Filling into Crust
Pour the cheesecake filling over the cooled crust in the springform pan.

Bake the Cheesecake
Bake in the oven at 350°F (175°C) for 50-60 minutes, or until the center is set but slightly jiggly.

Cool and Refrigerate
Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then, refrigerate for at least 4 hours or overnight.

Prepare Strawberries
In a medium bowl, combine sliced strawberries, granulated sugar, and lemon juice. Toss gently and let sit for about 15 minutes to create a syrup.

Once the cheesecake is cool and set, remove it from the springform pan and place it on a serving platter. Top with the macerated strawberries before serving.
