Mix Dry Ingredients
In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Cut in Butter
Add the cold unsalted butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Add Buttermilk
Pour in the buttermilk and mix until just combined. Do not overmix.

Turn the dough onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out biscuits using a biscuit cutter or a glass.

In a large skillet over medium heat, cook the Italian sausage until browned and cooked through, breaking it into crumbles as it cooks.

Sprinkle the flour over the cooked sausage and stir for about 1 minute to create a roux.

Slowly whisk in the milk, ensuring there are no lumps. Bring the mixture to a simmer and cook until thickened, about 5-7 minutes.
