Prepare the Meat

    Slice the Meat

    Thinly slice the lean beef and lamb into strips.

    Marinate the Meat

    In a large bowl, combine the olive oil, minced garlic, oregano, cumin, salt, black pepper, and lemon juice. Add the sliced beef and lamb, ensuring they are well coated. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

Prepare the Sauce

    Make Tzatziki Sauce

    In a bowl, combine Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Mix well and season with salt to taste. Refrigerate until ready to serve.

Cook the Meat

    Cook the Marinated Meat

    Preheat a grill or skillet over medium-high heat. Add the marinated beef and lamb strips and cook for about 5-7 minutes, or until the meat is cooked through and has a nice char. Remove from heat and let rest for a few minutes.

Assemble the Gyro

    Prepare the Wrap

    Warm the pita bread slightly on the grill or in a skillet for about 1 minute on each side.

    On each pita, layer the cooked meat, sliced red onion, diced tomato, diced cucumber, and chopped parsley.

    Drizzle the tzatziki sauce generously over the filled pita.

    Fold the pita over the fillings, wrap in parchment paper if desired, and serve immediately.
