    In a large mixing bowl, combine the ground pork shoulder and fatback. Add minced garlic, paprika, salt, black pepper, cayenne pepper, and red wine vinegar. Mix thoroughly until all ingredients are well incorporated.

    Soak the hog casings in water for at least 30 minutes. Rinse them thoroughly to remove any salt or debris.

    Using a sausage stuffer, carefully fill the casings with the prepared meat mixture. Be careful not to overstuff, as the sausages need room to expand while cooking. Twist the sausages into 6-inch links and tie off the ends.
