Preparation Directions
Cook the Polenta
In a medium saucepan, bring 4 cups of water to a boil. Add 1 teaspoon of salt.
Add Cornmeal
Gradually whisk in 1 cup of cornmeal, stirring continuously to prevent lumps.
Simmer
Reduce heat to low and cook, stirring frequently, until the polenta thickens (about 15-20 minutes).
Add Cheese and Oil
Stir in 1 tablespoon of olive oil and 0.5 cups of grated parmesan cheese. Mix well and season with black pepper to taste.
Set Polenta
Transfer the polenta to a greased baking dish and spread it evenly. Allow to cool for at least 30 minutes to set.
Cut and Fry
Once set, cut the polenta into desired shapes (slices or sticks). Heat oil in a skillet over medium heat and fry the polenta pieces until golden and crispy on all sides.
Serve
Remove from skillet, drain on paper towels, and serve warm as a side dish.
