Prepare the Marinade
In a bowl, combine olive oil, garlic powder, onion powder, paprika, brown sugar, salt, black pepper, and dried thyme. Mix well to form a paste.

Marinate the Ribs
Rub the marinade all over the pork ribs, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

Preheat the Oven
Preheat your oven to 150°C (300°F).

Roast the Ribs
Place the marinated ribs on a baking tray lined with foil. Pour apple cider vinegar over the ribs, then cover tightly with foil. Roast in the preheated oven for 2.5 to 3 hours.

Finish and Serve
Remove the foil and increase the oven temperature to 220°C (425°F). Bake for an additional 20-30 minutes until the ribs are caramelized and crispy. Let rest for a few minutes before cutting and serving.
