    Prepare the Ribs

    Preheat your oven to 300°F (150°C). Pat the beef short ribs dry with paper towels. Season generously with salt, black pepper, garlic powder, onion powder, and smoked paprika on all sides.

    Sear the Ribs

    In a large skillet, heat olive oil over medium-high heat. Sear the short ribs for about 3-4 minutes on each side until browned. Remove the ribs and set aside.

    Braise the Ribs

    In a large oven-safe pot, add the beef broth and fresh rosemary. Place the seared ribs into the pot, cover it with a lid or aluminum foil, and transfer to the preheated oven.

    Cook Low and Slow

    Braise the ribs in the oven for 3 to 4 hours, or until the meat is tender and easily falls off the bone.

    Serve

    Remove from the oven, let the ribs rest for 10 minutes, then serve with your favorite sides.
