1. Prepare the Ingredients

Chop the Portobello mushrooms, carrots, celery, onion, and garlic.

2. Brown the Sausage

In a large pot, heat olive oil over medium heat. Add the venison sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.

3. Sauté Vegetables

In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until the vegetables are softened.

4. Add Mushrooms and Broth

Stir in the Portobello mushrooms and cook for an additional 2-3 minutes. Pour in the beef broth and bring to a simmer.

5. Season and Simmer

Return the browned sausage to the pot. Add thyme, bay leaves, salt, and black pepper. Simmer for 30 minutes, stirring occasionally.

6. Finish and Serve

Remove the bay leaves and stir in parsley before serving. Enjoy your hearty venison sausage stew!
