Prepare the Marinade

In a bowl, mix honey, balsamic vinegar, salt, and black pepper to create a marinade.

Marinate the Chicken

Place the chicken breasts in the marinade and let them soak for at least 30 minutes, or up to 2 hours in the refrigerator.

Cook the Potatoes

Boil the red potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.

Sauté the Vegetables

In a large skillet, heat olive oil over medium heat. Add chopped onions and sauté until translucent. Add seasonal vegetables and cook until tender.

Cook the Chicken

Remove the chicken from the marinade and place it in the skillet. Cook for 6-7 minutes on each side until browned and cooked through, basting with the marinade.

Combine and Serve

Add the golden raisins and pine nuts to the skillet during the last couple of minutes of cooking. Serve the glazed chicken with the sautéed vegetables and boiled potatoes.
