Prepare the Rice
Rinse the jasmine rice under cold water until the water runs clear. In a saucepan, combine the rinsed rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed. Fluff with a fork and set aside.

Cook the Chicken
Season the chicken breasts with salt and pepper. Heat a skillet over medium heat and add a little oil. Cook the chicken for about 6-7 minutes on each side or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest for a few minutes before slicing.

Prepare the Vegetables
While the chicken is cooking, chop the red bell pepper and roughly chop the cilantro. If using frozen green peas, thaw them under running water.

Combine Ingredients
In a large bowl, combine the cooked jasmine rice, green peas, chopped red bell pepper, and cilantro. Toss gently to mix.

Serve
Plate the rice and vegetable mixture, then top with sliced chicken. Garnish with extra cilantro if desired.
