    Sear the Lamb

    In a large pot, heat olive oil over medium-high heat. Add the lamb chunks and sear until browned on all sides, about 5-7 minutes. Remove the lamb and set aside.

    Sauté Vegetables

    In the same pot, add diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic, carrots, and potatoes; cook for another 5 minutes.

    Stir in cumin, paprika, salt, and black pepper. Cook for 1-2 minutes until fragrant.

    Combine Ingredients

    Return the seared lamb to the pot and pour in the beef broth. Bring to a boil, then reduce heat to low and cover. Simmer for 1.5 to 2 hours, or until the lamb is tender.

    Finish with Cilantro

    Stir in the chopped cilantro and let it cook for an additional 10 minutes. Adjust seasoning to taste.
