    Prepare the Potatoes

    Peel and dice the potatoes into small cubes. In a skillet, heat olive oil over medium heat, add the diced potatoes, and season with salt and pepper. Cook until golden brown and tender, about 15-20 minutes, stirring occasionally.

    Make the Waffle Batter

    In a large bowl, whisk together flour, sugar, baking powder, and salt. In another bowl, combine milk, eggs, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

    Cook the Waffles

    Preheat your waffle maker according to the manufacturer's instructions. Pour the batter into the preheated waffle maker and cook until golden brown and crispy, usually about 4-6 minutes.

    In a non-stick skillet, heat a little butter over medium-low heat. Crack the eggs into the skillet and cook until the whites are set but the yolks remain runny, about 3-4 minutes.
