Prepare the Beans

Soak the red kidney beans in water overnight or for at least 6-8 hours. Drain and rinse before cooking.

Cook the Sausage

In a large pot, heat the olive oil over medium heat. Add the andouille sausage and cook until browned, about 5 minutes. Remove and set aside.

Sauté the Vegetables

In the same pot, add the chopped onion, green bell pepper, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Combine Ingredients

Return the sausage to the pot. Add the soaked beans, chicken broth, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a boil.

Simmer

Reduce heat to low, cover, and let simmer for about 1.5 hours, or until the beans are tender. Stir occasionally and add more broth if necessary.

Serve

Remove bay leaves before serving. Serve hot in cups or bowls, optionally with dirty rice on the side.
