Cooking Instructions
Cook the Pasta
In a large pot, bring salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.
Prepare the Alligator and Sausage
In a skillet, heat olive oil over medium heat. Add the alligator meat and Andouille sausage. Sprinkle with Cajun seasoning and cook until browned and cooked through, about 5-7 minutes. Remove from heat and set aside.
Make the Cheese Sauce
In a large saucepan, melt butter over medium heat. Stir in the flour, and cook for 1-2 minutes. Gradually whisk in the milk, stirring constantly until the sauce thickens. Add cream cheese, cheddar cheese, mozzarella cheese, salt, and black pepper. Stir until all the cheese is melted and the sauce is smooth.
Combine Ingredients
In a large mixing bowl, combine the cooked pasta, cheese sauce, and the cooked alligator and sausage. Stir until well combined.
Prepare Topping
In a small bowl, mix the bread crumbs, grated Parmesan cheese, and a little olive oil. Stir until the bread crumbs are evenly coated.
Bake the Dish
Preheat the oven to 350°F (175°C). Transfer the mac and cheese mixture to a baking dish. Sprinkle the bread crumb mixture over the top. Bake for 25-30 minutes until golden and bubbly.
Garnish and Serve
Remove from the oven, let cool for a few minutes, then garnish with chopped green onions before serving.
