Prepare the Pork Chop

Marinate the Pork
In a small bowl, mix together honey, Tabasco sauce, salt, and black pepper. Brush the mixture onto both sides of the pork rib-eye chops and let marinate for at least 30 minutes.

Prepare the Dirty Rice

Cook the Meat and Vegetables
In a large skillet, heat a little olive oil over medium heat. Add the chopped onion, celery, and green bell pepper, and sauté for about 5 minutes until they are tender. Add the ground beef or sausage and cook until browned.

Add Rice and Broth
Stir in the minced garlic and Cajun seasoning. Add the rice and chicken broth, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until the rice is cooked and the liquid is absorbed.
Prepare the Sautéed Spinach

Sauté the Spinach
In a separate skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute, then add fresh spinach. Sauté until the spinach is wilted, about 3-4 minutes. Season with salt and black pepper.
Serve the Dish
