1. Prepare the Oysters

Preheat your grill or broiler. Carefully shuck the oysters and place them on a baking sheet. Discard the top shell and keep the oysters in the bottom shell.

2. Make the Spiced Herb Butter

In a bowl, combine the unsalted butter, minced garlic, Worcestershire sauce, chopped parsley, paprika, and cracked black pepper. Mix well until all ingredients are combined.

3. Assemble the Oysters

Spoon a generous amount of the spiced herb butter mixture over each oyster. Then, top each oyster with equal parts of the mozzarella and Parmesan cheese.

4. Char-Broil the Oysters

Place the baking sheet with the oysters on the grill or under the broiler. Cook for about 5-7 minutes, or until the cheese is melted, bubbly, and slightly golden.

5. Serve

Remove the oysters from the grill or broiler and let them cool slightly. Serve immediately with lemon wedges, if desired.
